Ingredients:
- 4 oz cream cheese, softened
- 2 tbsp plain Greek yogurt
- 2 tbsp fresh dill, finely minced
- 1 tbsp fresh chives, finely minced
- 1 tsp fresh lemon juice
- 1/4 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 medium English cucumber (approx. 12 oz)
- 1 tsp kosher salt (for sweating)
- 12 slices white bread
Instructions:
- Slice the English cucumber into 1/8-inch thick rounds.
- Lay the cucumber slices in a single layer on paper towels and sprinkle evenly with 1 tsp of kosher salt. Let them sit for 10 minutes.
- Pat the tops of the cucumber slices firmly with another paper towel to remove all surface moisture.
- In a small mixing bowl, beat the softened cream cheese until smooth.
- Fold in the Greek yogurt and lemon juice until the mixture is velvety and cohesive.
- Stir in the minced dill, chives, salt, and pepper until the herbs are evenly distributed.
- Apply a consistent, edge-to-edge layer of the spread to each slice of bread.
- Layer the dried cucumber rounds over the spread and assemble the sandwiches.
