  • 1/4 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 medium English cucumber (approx. 12 oz)
  • 1 tsp kosher salt (for sweating)
  • 12 slices white bread

Instructions:

  1. Slice the English cucumber into 1/8-inch thick rounds.
  2. Lay the cucumber slices in a single layer on paper towels and sprinkle evenly with 1 tsp of kosher salt. Let them sit for 10 minutes.
  3. Pat the tops of the cucumber slices firmly with another paper towel to remove all surface moisture.
  4. In a small mixing bowl, beat the softened cream cheese until smooth.
  5. Fold in the Greek yogurt and lemon juice until the mixture is velvety and cohesive.
  6. Stir in the minced dill, chives, salt, and pepper until the herbs are evenly distributed.
  7. Apply a consistent, edge-to-edge layer of the spread to each slice of bread.
  8. Layer the dried cucumber rounds over the spread and assemble the sandwiches.
