Ingredients:
- 2 large English cucumbers (approx. 700g), sliced into 1/8-inch rounds
- 1 small red onion (approx. 100g), thinly sliced into half-moons
- 1 tbsp Kosher salt
- 1/2 cup full-fat sour cream (120g)
- 1/4 cup high-quality mayonnaise (60g)
- 2 tbsp white wine vinegar (30ml)
- 1 tbsp granulated sugar (12g)
- 1 clove garlic, finely minced
- 1/4 cup fresh dill, chopped
- 1/2 tsp freshly cracked black pepper
Instructions:
- Place the sliced cucumbers and red onions in a colander set over a bowl. Toss thoroughly with the Kosher salt. Let them sit for 30 minutes to extract excess moisture through osmosis.
- While the vegetables drain, prepare the dressing. In a medium bowl, whisk together the sour cream, mayonnaise, vinegar, sugar, minced garlic, and black pepper until smooth and the sugar has dissolved.
- Thoroughly pat the cucumbers and onions dry with paper towels to remove excess surface moisture and residual salt.
- Combine the dried vegetables and chopped fresh dill with the dressing. Toss until every slice is evenly coated.
- Serve immediately or chill for at least 15 minutes to allow flavors to meld further.
