Ingredients:

  • 10 oz (280g) fresh spinach, washed and roughly chopped
  • 8 oz (225g) cream cheese, softened
  • 1 cup (100g) sour cream
  • 1 cup (100g) shredded mozzarella cheese, plus ½ cup for topping
  • ½ cup (50g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil for sautéing

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  2. Add chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat.
  3. In a mixing bowl, combine cream cheese, sour cream, mozzarella, Parmesan, onion powder, and crushed red pepper flakes.
  4. Fold in sautéed spinach. Season with salt and black pepper to taste.
  5. Spoon the dip mixture into a greased baking dish. Sprinkle the remaining mozzarella over the top.
  6. Preheat the oven to 350°F (175°C). Bake for 20-25 minutes, or until bubbly and golden brown on top.
  7. Let the dip cool for a few minutes before serving. Enjoy with tortilla chips, pita bread, or fresh veggies!
