Ingredients:
- 10 oz (280g) fresh spinach, washed and roughly chopped
- 8 oz (225g) cream cheese, softened
- 1 cup (100g) sour cream
- 1 cup (100g) shredded mozzarella cheese, plus ½ cup for topping
- ½ cup (50g) grated Parmesan cheese
- 2 cloves garlic, minced
- ½ teaspoon onion powder
- ½ teaspoon crushed red pepper flakes
- Salt and black pepper, to taste
- 2 tablespoons olive oil for sautéing
Instructions:
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Add chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat.
- In a mixing bowl, combine cream cheese, sour cream, mozzarella, Parmesan, onion powder, and crushed red pepper flakes.
- Fold in sautéed spinach. Season with salt and black pepper to taste.
- Spoon the dip mixture into a greased baking dish. Sprinkle the remaining mozzarella over the top.
- Preheat the oven to 350°F (175°C). Bake for 20-25 minutes, or until bubbly and golden brown on top.
- Let the dip cool for a few minutes before serving. Enjoy with tortilla chips, pita bread, or fresh veggies!
