Ingredients:
- 2 cups (192g) superfine almond flour
- 1/3 cup (75g) melted unsalted butter
- 2 tbsp (24g) granulated monk fruit sweetener
- 1 tsp (2g) ground cinnamon
- 1 pinch (1g) salt
- 24 oz (680g) full-fat cream cheese, softened
- 1 cup (245g) pure pumpkin puree
- 3/4 cup (150g) powdered monk fruit sweetener
- 3 large eggs, room temperature
- 1/2 cup (120ml) heavy whipping cream
- 1 tsp (5ml) vanilla extract
- 2 tsp (4g) pumpkin pie spice
- 1/4 tsp (1g) salt
Instructions:
- Preheat your oven to 325°F (160°C).
- Combine almond flour, melted butter, sweetener, cinnamon, and salt in a bowl until it resembles wet sand.
- Press the mixture firmly into the bottom of a parchment-lined springform pan.
- Bake for 10 minutes until it smells nutty and looks lightly golden. Set aside to cool slightly.
- Beat the softened cream cheese and powdered sweetener on medium-high until completely smooth and aerated.
- Add pumpkin puree, pumpkin pie spice, vanilla, and salt. Mix on low until the color is a uniform mahogany hue.
- Add eggs one at a time, mixing on low speed just until incorporated. Stop immediately once blended to avoid incorporating too much air.
- Slowly stir in the heavy whipping cream by hand using a spatula for a final glossy finish.
- Pour the filling over the pre-baked crust and smooth the top with a spatula.
- Bake the cheesecake (using a water bath as per equipment recommendations) for 60 minutes.
- Allow to cool and chill in the refrigerator for a minimum of 6 hours before slicing.
