Ingredients:

  • 1 box (3 oz / 85g) Orange flavored gelatin powder
  • 1 container (8 oz / 225g) Whipped topping, thawed
  • 2 cups (450g) Small curd cottage cheese, full fat
  • 1 can (11 oz / 312g) Mandarin oranges, thoroughly drained
  • 1 can (8 oz / 227g) Crushed pineapple, thoroughly drained
  • 1.5 cups (75g) Miniature marshmallows

Instructions:

  1. Drain the fruit thoroughly. Place the mandarin oranges and crushed pineapple into a fine mesh strainer over the sink. Let them sit for at least 5 minutes and shake gently until no liquid drips from the bottom. Note: Excess moisture is the enemy of fluffiness.
  2. Combine the base. In a large mixing bowl, combine the 2 cups of cottage cheese and the dry orange gelatin powder.
  3. Mix the base. Stir with a spatula until the powder is fully incorporated and the mixture is a uniform orange color.
  4. Introduce the aeration. Add the 8 oz of thawed whipped topping to the bowl.
  5. Perform the fold. Use a rubber spatula to gently fold the topping into the cottage cheese mixture by cutting through the center and lifting from the bottom until no white streaks remain.
  6. Add the fruit. Gently fold in the drained mandarin oranges and crushed pineapple.
  7. Integrate the marshmallows. Add the 1.5 cups of miniature marshmallows and stir until they are evenly distributed throughout the cream.
  8. Seal and chill. Cover the bowl with plastic wrap or a lid.
  9. Allow the set. Refrigerate for at least 2 hours.
  10. Final Check. Stir gently before serving until the texture looks matte and holds a soft peak on the spoon. > Chef's Tip: If you want the mandarin oranges to stay whole and beautiful, add them at the very last second. They are fragile, and over mixing will shatter them into orange bits. A gentle hand ensures those jewels remain intact for a professional presentation.
