Ingredients:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 10 ounces fresh spinach, washed and thoroughly dried
  • 15 ounces ricotta cheese, preferably whole milk
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon zest
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted, about 2-3 minutes. Squeeze out excess moisture.
  2. In a large bowl, combine ricotta, Parmesan cheese, beaten egg, nutmeg, lemon zest, salt, and pepper.
  3. Roughly chop the cooked spinach and add it to the ricotta mixture. Mix well to combine.
  4. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld and the filling to firm up slightly.
