Ingredients:
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 10 ounces fresh spinach, washed and thoroughly dried
- 15 ounces ricotta cheese, preferably whole milk
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon zest
- Salt and freshly ground black pepper to taste
Instructions:
- Sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted, about 2-3 minutes. Squeeze out excess moisture.
- In a large bowl, combine ricotta, Parmesan cheese, beaten egg, nutmeg, lemon zest, salt, and pepper.
- Roughly chop the cooked spinach and add it to the ricotta mixture. Mix well to combine.
- Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld and the filling to firm up slightly.
