Ingredients:
- 2 lbs English Cucumbers, sliced 1/8-inch thick
- 100g red onion, paper-thinly sliced
- 1.5 tsp kosher salt
- 1/2 cup apple cider vinegar
- 2 tbsp granulated sugar
- 1/2 tsp black pepper, freshly cracked
- 1/4 tsp red pepper flakes
- 1/2 cup fresh dill, roughly chopped
- 1 tbsp extra virgin olive oil
Instructions:
- Using a mandoline or sharp knife, slice the English cucumbers and red onions into uniform 1/8-inch rounds.
- Place cucumber and onion slices in a colander set over a bowl. Toss with 1.5 tsp kosher salt and let sit for 30 minutes to draw out excess moisture via osmosis.
- Discard the collected liquid. Pat the cucumber and onion slices thoroughly dry with a clean kitchen towel.
- In a large mixing bowl, whisk together the apple cider vinegar, granulated sugar, black pepper, red pepper flakes, and olive oil until the sugar is fully dissolved.
- Add the drained cucumbers, onions, and fresh dill to the dressing. Toss gently to coat every slice.
- Chill in the refrigerator for at least 15 minutes before serving to allow flavors to marinate.
