Ingredients:

  • 2 lbs English Cucumbers, sliced 1/8-inch thick
  • 100g red onion, paper-thinly sliced
  • 1.5 tsp kosher salt
  • 1/2 cup apple cider vinegar
  • 2 tbsp granulated sugar
  • 1/2 tsp black pepper, freshly cracked
  • 1/4 tsp red pepper flakes
  • 1/2 cup fresh dill, roughly chopped
  • 1 tbsp extra virgin olive oil

Instructions:

  1. Using a mandoline or sharp knife, slice the English cucumbers and red onions into uniform 1/8-inch rounds.
  2. Place cucumber and onion slices in a colander set over a bowl. Toss with 1.5 tsp kosher salt and let sit for 30 minutes to draw out excess moisture via osmosis.
  3. Discard the collected liquid. Pat the cucumber and onion slices thoroughly dry with a clean kitchen towel.
  4. In a large mixing bowl, whisk together the apple cider vinegar, granulated sugar, black pepper, red pepper flakes, and olive oil until the sugar is fully dissolved.
  5. Add the drained cucumbers, onions, and fresh dill to the dressing. Toss gently to coat every slice.
  6. Chill in the refrigerator for at least 15 minutes before serving to allow flavors to marinate.
