Ingredients:
- 2 medium watermelon radishes, thinly sliced (approximately 300 g)
- 4 cups arugula (approximately 120 g)
- 1 cup cucumber, thinly sliced (approximately 150 g)
- ½ cup feta cheese, crumbled (approximately 75 g)
- ¼ cup green onions, sliced (approximately 30 g)
- ¼ cup olive oil (60 ml)
- 2 tablespoons fresh lemon juice (30 ml)
- 1 tablespoon orange juice (15 ml)
- 1 teaspoon honey (5 g)
- Salt and pepper to taste
Instructions:
- Thinly slice the watermelon radishes and cucumbers, and slice the green onions.
- In a large mixing bowl, combine arugula, sliced radishes, cucumbers, feta, and green onions.
- In a small bowl, whisk together olive oil, lemon juice, orange juice, honey, salt, and pepper until combined.
- Drizzle the vinaigrette over the salad and toss gently to combine.
- Transfer to a serving bowl and enjoy fresh.
