Ingredients:

  • 2 medium watermelon radishes, thinly sliced (approximately 300 g)
  • 4 cups arugula (approximately 120 g)
  • 1 cup cucumber, thinly sliced (approximately 150 g)
  • ½ cup feta cheese, crumbled (approximately 75 g)
  • ¼ cup green onions, sliced (approximately 30 g)
  • ¼ cup olive oil (60 ml)
  • 2 tablespoons fresh lemon juice (30 ml)
  • 1 tablespoon orange juice (15 ml)
  • 1 teaspoon honey (5 g)
  • Salt and pepper to taste

Instructions:

  1. Thinly slice the watermelon radishes and cucumbers, and slice the green onions.
  2. In a large mixing bowl, combine arugula, sliced radishes, cucumbers, feta, and green onions.
  3. In a small bowl, whisk together olive oil, lemon juice, orange juice, honey, salt, and pepper until combined.
  4. Drizzle the vinaigrette over the salad and toss gently to combine.
  5. Transfer to a serving bowl and enjoy fresh.
