Ingredients:
- 2 medium heads cauliflower (approx. 3 lbs)
- 3 tbsp extra virgin olive oil
- 1/2 cup Panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
Instructions:
- Cut the cauliflower heads from the bottom, keeping the stem intact. Slice 4 center-cut steaks about 1 inch thick, collecting the remaining loose florets to bake alongside them.
- In a small bowl, whisk together the olive oil, Parmesan cheese, garlic powder, smoked paprika, salt, and black pepper.
- Brush the oil and spice mixture generously over the top, bottom, and sides of each cauliflower steak. Firmly press the Panko breadcrumbs into the coating.
- Place the steaks and loose florets on a parchment-lined baking sheet, ensuring they do not overlap. Bake at 400°F (200°C) for 15 minutes.
- Carefully flip the steaks using a wide spatula and bake for another 15 minutes until the edges are charred and the center is tender when pierced with a fork.
