Ingredients:

  • 2 medium heads cauliflower (approx. 3 lbs)
  • 3 tbsp extra virgin olive oil
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Cut the cauliflower heads from the bottom, keeping the stem intact. Slice 4 center-cut steaks about 1 inch thick, collecting the remaining loose florets to bake alongside them.
  2. In a small bowl, whisk together the olive oil, Parmesan cheese, garlic powder, smoked paprika, salt, and black pepper.
  3. Brush the oil and spice mixture generously over the top, bottom, and sides of each cauliflower steak. Firmly press the Panko breadcrumbs into the coating.
  4. Place the steaks and loose florets on a parchment-lined baking sheet, ensuring they do not overlap. Bake at 400°F (200°C) for 15 minutes.
  5. Carefully flip the steaks using a wide spatula and bake for another 15 minutes until the edges are charred and the center is tender when pierced with a fork.
