Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lb / 680 g)
  • 1 cup (120 g) all-purpose flour
  • 2 large eggs
  • 1 cup (100 g) seasoned breadcrumbs
  • 1 cup (100 g) grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cups (480 ml) marinara sauce (store-bought or homemade)
  • 1 cup (120 g) shredded mozzarella cheese
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Flatten the chicken breasts to an even thickness using a meat tenderizer. Season both sides with salt and pepper.
  2. In the first bowl, add the flour. In the second bowl, whisk the eggs until fully blended. In the third bowl, combine breadcrumbs, Parmesan cheese, garlic powder, and oregano.
  3. Dredge each chicken breast in flour, shaking off excess. Dip in the egg, allowing excess to drip off. Coat well with the breadcrumb mixture.
  4. Heat oil in a large skillet over medium heat. Carefully add the breaded chicken to the skillet and cook until golden brown, about 4-5 minutes per side. Drain on paper towels.
  5. Preheat the oven to 400°F (200°C). Spread marinara sauce at the bottom of a baking dish. Place the fried chicken on top. Spoon additional marinara sauce over each chicken breast and sprinkle with mozzarella cheese. Bake for 15 minutes or until cheese is bubbly and golden.
  6. Garnish with fresh basil (if desired). Serve hot with your choice of pasta or side dishes.
