Ingredients:
- 1 ½ cups All-Purpose Flour, sifted
- ¼ cup Granulated Sugar
- 2 teaspoons Baking Powder
- ½ teaspoon Kosher Salt
- ½ cup Unsweetened, finely shredded Coconut
- 2 Large Eggs, separated into yolks and whites
- 1 cup Full-Fat Coconut Milk (Canned)
- ½ cup Unsalted Butter, melted and cooled
- 1 teaspoon Pure Vanilla Extract
- 1 cup Confectioners’ (Powdered) Sugar, sifted
- 2–3 tablespoons Fresh Lime Juice
- 1 teaspoon Lime Zest
Instructions:
- Preheat the waffle iron according to the manufacturer’s instructions. Lightly brush or spray the plates with non-stick cooking oil.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and shredded coconut. Set aside (Dry Ingredients).
- In a separate medium bowl, whisk the two egg yolks until smooth. Add the full-fat coconut milk, cooled melted butter, and vanilla extract. Whisk until fully combined (Wet Ingredients).
- Pour the wet mixture into the dry ingredients. Stir gently with a rubber spatula until just combined. Do not overmix; a few lumps are fine.
- Place the 2 egg whites into a clean, grease-free bowl. Beat them on medium-high speed until stiff, glossy peaks form.
- Add about one-third of the whipped egg whites into the main batter and quickly stir them in to lighten the mixture.
- Add the remaining two-thirds of the egg whites. Using the spatula, gently fold them in using a figure-eight motion, rotating the bowl as you go. Stop immediately once no large streaks of white remain.
- Ladle the appropriate amount of batter (usually ¼ to ½ cup) onto the center of the preheated waffle iron.
- Close the lid and cook for 4–5 minutes, or until the steam stops escaping and the waffles are deep golden brown and crisp. Remove immediately and place on a wire cooling rack (do not stack).
- To make the glaze: In a small bowl, whisk together the sifted powdered sugar, lime zest, and 2 tablespoons of lime juice. Add remaining lime juice, ½ teaspoon at a time, until the consistency is smooth and pourable.
- Drizzle the warm waffles generously with the lime glaze and serve immediately.
