Ingredients:
- 1 whole chicken (4-5 pounds)
- 2 tablespoons butter (unsalted, melted)
- 2 tablespoons chicken rub (or your favorite poultry rub)
- 2 cups fresh aromatics (suggestions: rosemary, thyme, lemon, apple, garlic, onion)
Instructions:
- Preheat the convection oven to 350°F (176°C).
- Pat the chicken dry with paper towels and season the cavity with chicken rub, then stuff with aromatics.
- Brush melted butter all over the chickens skin and sprinkle additional rub over the buttered skin.
- Place the chicken breast-side up on a roasting rack in a roasting pan; optionally truss the chicken legs.
- Bake until internal temperature reaches 165°F (74°C) in the thigh and breast, approximately 50-90 minutes.
- Remove the chicken from the oven, tent with foil and let it rest for 10-15 minutes before carving.
