Ingredients:

  • 1 whole chicken (4-5 pounds)
  • 2 tablespoons butter (unsalted, melted)
  • 2 tablespoons chicken rub (or your favorite poultry rub)
  • 2 cups fresh aromatics (suggestions: rosemary, thyme, lemon, apple, garlic, onion)

Instructions:

  1. Preheat the convection oven to 350°F (176°C).
  2. Pat the chicken dry with paper towels and season the cavity with chicken rub, then stuff with aromatics.
  3. Brush melted butter all over the chickens skin and sprinkle additional rub over the buttered skin.
  4. Place the chicken breast-side up on a roasting rack in a roasting pan; optionally truss the chicken legs.
  5. Bake until internal temperature reaches 165°F (74°C) in the thigh and breast, approximately 50-90 minutes.
  6. Remove the chicken from the oven, tent with foil and let it rest for 10-15 minutes before carving.
