Ingredients:

  • 2 medium rutabagas (about 1 ½ pounds / 680g), peeled and cut into ½-inch thick fries
  • 2 tablespoons (30ml) extra virgin olive oil
  • 2 teaspoons (4g) finely chopped fresh rosemary
  • 2 cloves minced garlic
  • ½ teaspoon (2.5g) salt, or to taste
  • ¼ teaspoon (0.5g) freshly ground black pepper, or to taste
  • Fresh parsley, chopped (optional garnish)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Peel and cut the rutabaga into even-sized fries.
  3. In a large bowl, toss the rutabaga fries with olive oil, rosemary, garlic, salt, and pepper until evenly coated.
  4. Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper (if using).
  5. Bake for 30-35 minutes, flipping halfway through, until golden brown and tender.
  6. Remove from oven and serve immediately, garnished with fresh parsley (if using).
