Ingredients:

  • 1 large head cauliflower, cut into uniform florets
  • 3 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup finely grated Parmesan cheese
  • 2 Tablespoons fresh parsley, chopped (optional garnish)

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper.
  2. Wash and thoroughly dry the cauliflower florets. In a large bowl, combine the florets with olive oil, garlic powder, oregano, salt, and pepper. Toss until everything is evenly coated.
  3. Spread the seasoned cauliflower onto the prepared baking sheet in a single layer, ensuring the florets have space between them.
  4. Roast for 15 minutes to begin the caramelization process.
  5. Remove the tray from the oven and sprinkle the grated Parmesan evenly over the hot cauliflower. Gently shake the tray to distribute the cheese without dislodging too much.
  6. Return the tray to the oven for another 10–15 minutes, watching carefully until the cheese is melted, bubbly, and golden brown.
  7. Remove from the oven, sprinkle immediately with fresh parsley if using, and serve piping hot.
