Ingredients:
- 12 asparagus spears (trimmed)
- 6 slices of prosciutto (halved)
- 2 tablespoons olive oil
- 1 pinch black pepper
- Grated Parmesan cheese or crumbled feta cheese and fresh herbs
Instructions:
- Remove woody ends by bending each asparagus stalk until it snaps.
- Fill a medium saucepan with enough water to cover the asparagus and bring it to a boil.
- Add the asparagus to boiling water for 2 minutes.
- Prepare a large bowl with ice water.
- After 2 minutes, strain the asparagus and immediately place it in the ice water to cool for another 2 minutes.
- Strain again and dry with a towel.
- Halve each slice of prosciutto to yield 12 pieces.
- Wrap each piece around an asparagus spear starting from one end.
- Heat olive oil in a skillet over medium heat.
- Add the prosciutto-wrapped asparagus to the skillet and sauté for about 30 seconds on each side or until the prosciutto is crispy and golden brown.
- Remove from heat and garnish with black pepper, grated Parmesan, or crumbled feta, if desired. Serve warm.
