Ingredients:

  • 12 asparagus spears (trimmed)
  • 6 slices of prosciutto (halved)
  • 2 tablespoons olive oil
  • 1 pinch black pepper
  • Grated Parmesan cheese or crumbled feta cheese and fresh herbs

Instructions:

  1. Remove woody ends by bending each asparagus stalk until it snaps.
  2. Fill a medium saucepan with enough water to cover the asparagus and bring it to a boil.
  3. Add the asparagus to boiling water for 2 minutes.
  4. Prepare a large bowl with ice water.
  5. After 2 minutes, strain the asparagus and immediately place it in the ice water to cool for another 2 minutes.
  6. Strain again and dry with a towel.
  7. Halve each slice of prosciutto to yield 12 pieces.
  8. Wrap each piece around an asparagus spear starting from one end.
  9. Heat olive oil in a skillet over medium heat.
  10. Add the prosciutto-wrapped asparagus to the skillet and sauté for about 30 seconds on each side or until the prosciutto is crispy and golden brown.
  11. Remove from heat and garnish with black pepper, grated Parmesan, or crumbled feta, if desired. Serve warm.
