Ingredients:
- 2 lbs large sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp extra virgin olive oil
- 1 tsp cornstarch
- 1 tsp fine sea salt
- 1/2 tsp cracked black pepper
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
Instructions:
- Preheat your oven to 400°F (200°C) and place the baking sheet inside while it heats. Peel the sweet potatoes and cut them into uniform 1-inch cubes to ensure even cooking.
- Place cubes in a bowl and sprinkle with 1 tsp cornstarch. Toss until they look dusty and matte.
- Drizzle the olive oil over the dusted potatoes and toss again until the starch forms a coating on each cube.
- Add 1 tsp sea salt, 1/2 tsp pepper, 1/2 tsp smoked paprika, and 1/4 tsp garlic powder. Toss until the color is a uniform vibrant orange.
- Spread the cubed potatoes onto a large rimmed baking sheet. Ensure there is at least half an inch of space between each piece to prevent steaming.
- Roast in the center rack of the oven for 15 minutes. Remove the pan and use a spatula to flip the potatoes.
- Return to the oven and roast for an additional 15 minutes until the edges are deep brown and the exterior is crispy.
