Ingredients:

  • 1 ½ pounds ground beef (80/20 preferred for juiciness)
  • 1 cup breadcrumbs, preferably plain
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard

Instructions:

  1. Gather all ingredients and equipment.
  2. In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, parsley, salt, and pepper. Use your hands or a spatula to mix until just combined—don't overwork it!
  3. Form mixture into a loaf shape—about 8 inches long.
  4. In a separate bowl, mix ketchup, brown sugar, apple cider vinegar, and mustard until smooth.
  5. Place the meatloaf in the center of the slow cooker. Spread the glaze on top of the meatloaf.
  6. Cover and cook on low for 6 hours, or until the internal temperature reaches 160°F (70°C).
  7. Let the meatloaf rest for 10 minutes before slicing. Serve with your favorite sides.
