Ingredients:
- 1 ½ pounds ground beef (80/20 preferred for juiciness)
- 1 cup breadcrumbs, preferably plain
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- ½ cup milk
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon mustard
Instructions:
- Gather all ingredients and equipment.
- In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, parsley, salt, and pepper. Use your hands or a spatula to mix until just combined—don't overwork it!
- Form mixture into a loaf shape—about 8 inches long.
- In a separate bowl, mix ketchup, brown sugar, apple cider vinegar, and mustard until smooth.
- Place the meatloaf in the center of the slow cooker. Spread the glaze on top of the meatloaf.
- Cover and cook on low for 6 hours, or until the internal temperature reaches 160°F (70°C).
- Let the meatloaf rest for 10 minutes before slicing. Serve with your favorite sides.
