- 1 tbsp fresh lemon juice
- 2 tbsp fresh dill, finely chopped
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 English cucumber (14 oz)
- 1 loaf soft white sandwich bread (16 oz)
- 2 tbsp unsalted butter, softened
- 1/2 tsp kosher salt
Instructions:
- Slice the English cucumber into thin rounds (approximately 1/8 inch).
- Lay cucumber slices in a single layer on paper towels, sprinkle with 1/2 tsp kosher salt, let rest for 10 minutes, then pat dry with paper towels.
- In a medium bowl, combine softened cream cheese, mayonnaise, and lemon juice.
- Fold in chopped dill, garlic powder, salt, and pepper, stirring until smooth.
- Lightly butter one side of each bread slice to create a moisture barrier.
- Spread a generous, even layer of the herb cream cheese from edge to edge on the buttered bread.
- Layer the dried cucumber slices in an overlapping pattern and top with a second slice of bread, pressing down gently.
- Use a serrated knife to remove the crusts and cut each sandwich diagonally into triangles or into four small rectangles.
