Ingredients:

  • 8 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh dill, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 English cucumber (14 oz)
  • 1 loaf soft white sandwich bread (16 oz)
  • 2 tbsp unsalted butter, softened
  • 1/2 tsp kosher salt

Instructions:

  1. Slice the English cucumber into thin rounds (approximately 1/8 inch).
  2. Lay cucumber slices in a single layer on paper towels, sprinkle with 1/2 tsp kosher salt, let rest for 10 minutes, then pat dry with paper towels.
  3. In a medium bowl, combine softened cream cheese, mayonnaise, and lemon juice.
  4. Fold in chopped dill, garlic powder, salt, and pepper, stirring until smooth.
  5. Lightly butter one side of each bread slice to create a moisture barrier.
  6. Spread a generous, even layer of the herb cream cheese from edge to edge on the buttered bread.
  7. Layer the dried cucumber slices in an overlapping pattern and top with a second slice of bread, pressing down gently.
  8. Use a serrated knife to remove the crusts and cut each sandwich diagonally into triangles or into four small rectangles.
