Ingredients:
- 3 large eggs (pasture-raised is best)
- ¾ cup almond flour (fine ground)
- ⅓ cup crème fraiche (or mascarpone cheese)
- ½ cup almond milk (or other nut milk of choice)
- ½ cup stevia (or preferred sweetener)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon xanthan gum
- 1.5 cups strawberries (hulled and sliced or quartered)
- Butter or oil (for greasing the pan)
- Swerve Confectioners sweetener (for dusting)
Instructions:
- Preheat Oven: Set the oven to 350°F (175°C).
- Prepare Pan: Grease a tart or pie pan with butter or oil.
- Prepare Strawberries: Hull and slice the strawberries into halves or quarters.
- Blend Batter: In a blender, combine eggs, crème fraiche, vanilla extract, baking powder, almond milk, sweetener, almond flour, and xanthan gum. Blend until smooth (about 10 seconds). Alternatively, mix by hand using a whisk.
- Fill Pan: Pour the batter into the greased pan and smooth it out with a spatula.
- Add Strawberries: Arrange the strawberry pieces cut side up on top of the batter.
- Bake: Place in the oven and bake for 30 minutes, or until slightly puffy and golden.
- Cool: Let cool slightly; it will deflate as it cools. Dust with Swerve Confectioners sweetener before serving.
