Ingredients:

  • 3 large eggs (pasture-raised is best)
  • ¾ cup almond flour (fine ground)
  • ⅓ cup crème fraiche (or mascarpone cheese)
  • ½ cup almond milk (or other nut milk of choice)
  • ½ cup stevia (or preferred sweetener)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon xanthan gum
  • 1.5 cups strawberries (hulled and sliced or quartered)
  • Butter or oil (for greasing the pan)
  • Swerve Confectioners sweetener (for dusting)

Instructions:

  1. Preheat Oven: Set the oven to 350°F (175°C).
  2. Prepare Pan: Grease a tart or pie pan with butter or oil.
  3. Prepare Strawberries: Hull and slice the strawberries into halves or quarters.
  4. Blend Batter: In a blender, combine eggs, crème fraiche, vanilla extract, baking powder, almond milk, sweetener, almond flour, and xanthan gum. Blend until smooth (about 10 seconds). Alternatively, mix by hand using a whisk.
  5. Fill Pan: Pour the batter into the greased pan and smooth it out with a spatula.
  6. Add Strawberries: Arrange the strawberry pieces cut side up on top of the batter.
  7. Bake: Place in the oven and bake for 30 minutes, or until slightly puffy and golden.
  8. Cool: Let cool slightly; it will deflate as it cools. Dust with Swerve Confectioners sweetener before serving.
