Instructions:
- Use a food processor to turn the cookies into fine crumbs or place them in a zip-top bag and crush them with a rolling pin.
- In a mixing bowl, blend the crushed Oreos with softened cream cheese until fully combined and smooth.
- Cover the bowl and refrigerate for about 30 minutes to firm it up for easier rolling.
- Once chilled, scoop out tablespoon-sized portions and roll them into balls.
- Heat the chocolate chips and coconut oil in the microwave in 30-second intervals, stirring until smooth.
- Dip each ball into the melted chocolate, ensuring even coverage, and place them on a parchment-lined baking sheet.
- Sprinkle crushed Oreos on top (if desired) and chill the coated balls until the chocolate hardens.
