Ingredients:
- 1 cup taro (peeled and diced)
- 1 cup water (for cooking taro)
- 1/2 cup milk (or non-dairy milk alternative)
- 2 tablespoons sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 1/2 cup tapioca pearls
- 4 cups water (for cooking tapioca pearls)
- Extra milk for topping (optional)
- Ice cubes (optional)
Instructions:
- Add diced taro and water to a saucepan. Bring to a boil, then reduce heat and simmer until soft, about 15 minutes.
- In a separate saucepan, bring 4 cups of water to a boil. Add tapioca pearls and cook according to package instructions (usually 5-15 minutes). Strain and rinse under cold water. Set aside.
- Transfer cooked taro to a blender. Add milk, sugar, and vanilla extract. Blend until smooth and creamy.
- In two tall glasses, add cooked tapioca pearls to the bottom. Fill glasses with ice cubes (if desired). Pour the taro milk mixture over the tapioca pearls. Top with extra milk if desired.
- Serve with a wide straw and enjoy the delightful blend of flavors and textures.
