Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ teaspoon salt
  • 3 tablespoons granulated sugar
  • 3 to 4 tablespoons ice water
  • 1 cup granulated sugar
  • ¾ cup packed light brown sugar
  • ½ cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup bourbon (optional)
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped walnuts

Instructions:

  1. In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until a dough forms. Chill for 30 minutes.
  2. In a large bowl, whisk together granulated sugar, brown sugar, and melted butter. Add eggs, vanilla extract, and bourbon (if using); mix until smooth. Stir in chocolate chips and chopped walnuts.
  3. Preheat the oven to 350°F (175°C). Roll out the chilled crust on a floured surface and fit it into the pie dish. Pour the filling evenly into the prepared crust.
  4. Bake for 40 to 50 minutes until the filling is set and the crust is golden brown. A toothpick inserted in the center should come out mostly clean.
  5. Allow the pie to cool for at least 30 minutes before slicing. Enjoy!
