Ingredients:

  • 1 large (14 oz) English cucumber, thinly sliced
  • 1/2 tsp Kosher salt
  • 4 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tbsp dried dill weed
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt
  • 8 slices white or whole wheat bread
  • 2 tbsp unsalted butter, softened

Instructions:

  1. Slice the English cucumber into thin, uniform rounds approximately 1/8 inch thick.
  2. Place cucumber slices in a colander, sprinkle with 1/2 tsp Kosher salt, and toss gently to coat.
  3. Allow cucumbers to sit for 10 minutes to draw out excess surface moisture.
  4. Spread slices in a single layer on paper towels and pat the tops firmly until completely dry.
  5. In a medium bowl, beat the softened cream cheese until smooth.
  6. Stir in the mayonnaise until fully incorporated and lump-free.
  7. Fold in the dried dill weed, garlic powder, salt, and pepper, mixing until herbs are evenly distributed.
  8. Optional: Spread a very thin layer of softened butter on one side of each bread slice to create an extra moisture barrier.
  9. Apply a generous, even layer of the dill cream spread to the buttered side of the bread.
  10. Layer dried cucumber slices onto the spread and top with a second slice of bread.
