  • 4 large boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • 2 tablespoons (30 ml) olive oil
  • Zest of 1 lime (optional for extra zest)

Instructions:

  1. In a mixing bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper, oregano, salt, and black pepper.
  2. Pat the chicken breasts dry with paper towels.
  3. Rub the chicken with olive oil, ensuring even coating.
  4. Sprinkle the dry rub generously over the chicken, making sure to cover all sides. Optional: add lime zest for added flavor.
  5. Let the chicken marinate for at least 30 minutes (or up to overnight in the refrigerator for maximum flavor).
  6. Preheat the oven to 400°F (200°C).
  7. Line a baking sheet with parchment paper (if using).
  8. Place the chicken breasts on the baking sheet and bake for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).
