- 4 large boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
- 2 tablespoons (30 ml) olive oil
- Zest of 1 lime (optional for extra zest)
Instructions:
- In a mixing bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper, oregano, salt, and black pepper.
- Pat the chicken breasts dry with paper towels.
- Rub the chicken with olive oil, ensuring even coating.
- Sprinkle the dry rub generously over the chicken, making sure to cover all sides. Optional: add lime zest for added flavor.
- Let the chicken marinate for at least 30 minutes (or up to overnight in the refrigerator for maximum flavor).
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper (if using).
- Place the chicken breasts on the baking sheet and bake for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).
