Ingredients:

  • 3 large Granny Smith or Honeycrisp apples (approx. 500g), peeled, cored, and sliced 1/4 inch thick
  • 1 tbsp (15g) granulated sugar
  • 1 tsp (2g) ground cinnamon
  • 1.5 cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tsp (5g) baking powder
  • 0.5 tsp (3g) kosher salt
  • 2 large eggs, room temperature
  • 0.5 cup (120ml) neutral oil (vegetable, canola, or grapeseed)
  • 0.25 cup (60ml) whole milk or orange juice
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform or round cake pan thoroughly.
  2. In a small bowl, toss the sliced apples with 1 tablespoon of granulated sugar and the ground cinnamon until the slices are glossy and evenly coated.
  3. In a large mixing bowl, whisk together the all-purpose flour, 1 cup of granulated sugar, baking powder, and salt.
  4. Create a well in the center of the dry ingredients and add the eggs, oil, milk (or orange juice), and vanilla extract.
  5. Whisk from the center outward until the batter is smooth and thick, being careful not to overmix once the flour is incorporated.
  6. Switch to a spatula and fold two-thirds of the cinnamon-sugar apples directly into the cake batter.
  7. Pour the mixture into the prepared pan. Arrange the remaining apple slices on top of the batter in a decorative spiral pattern.
  8. Bake on the center rack for 45–50 minutes. The cake is finished when the top is a deep mahogany brown and a toothpick inserted into the center comes out clean.
