Ingredients:
- 3 large Granny Smith or Honeycrisp apples (approx. 500g), peeled, cored, and sliced 1/4 inch thick
- 1 tbsp (15g) granulated sugar
- 1 tsp (2g) ground cinnamon
- 1.5 cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) kosher salt
- 2 large eggs, room temperature
- 0.5 cup (120ml) neutral oil (vegetable, canola, or grapeseed)
- 0.25 cup (60ml) whole milk or orange juice
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform or round cake pan thoroughly.
- In a small bowl, toss the sliced apples with 1 tablespoon of granulated sugar and the ground cinnamon until the slices are glossy and evenly coated.
- In a large mixing bowl, whisk together the all-purpose flour, 1 cup of granulated sugar, baking powder, and salt.
- Create a well in the center of the dry ingredients and add the eggs, oil, milk (or orange juice), and vanilla extract.
- Whisk from the center outward until the batter is smooth and thick, being careful not to overmix once the flour is incorporated.
- Switch to a spatula and fold two-thirds of the cinnamon-sugar apples directly into the cake batter.
- Pour the mixture into the prepared pan. Arrange the remaining apple slices on top of the batter in a decorative spiral pattern.
- Bake on the center rack for 45–50 minutes. The cake is finished when the top is a deep mahogany brown and a toothpick inserted into the center comes out clean.
