Ingredients:

  • 1 lb lean ground beef (90/10 blend)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup Asian pear or Fuji apple, grated
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 2 tbsp light brown sugar
  • 1/2 tsp red pepper flakes
  • 3 green onions, thinly sliced (whites and greens separated)
  • 3 cups cooked jasmine rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup kimchi
  • 1 tbsp toasted sesame seeds

Instructions:

  1. In a small bowl, whisk together the grated pear (with juices), soy sauce, sesame oil, brown sugar, red pepper flakes, minced garlic, and grated ginger until the sugar is dissolved.
  2. Heat a large skillet over medium-high heat. Add the ground beef and break into large chunks. Let sit undisturbed for 3 minutes to develop a deep brown crust.
  3. Break the meat into smaller crumbles and stir in the white parts of the green onions.
  4. Pour the sauce mixture over the beef. Cook for 2-3 minutes, stirring constantly, until the sauce reduces and creates a glossy glaze over the meat.
  5. Assemble the bowls by dividing the cooked rice, glazed beef, shredded carrots, cucumbers, and kimchi among four bowls. Garnish with sesame seeds and the remaining green onion tops.
