Ingredients:
- 6 medium apples (about 2 pounds / 900g), peeled, cored, and sliced (Granny Smith or a mix of tart and sweet apples)
- 1/4 cup (50g) granulated sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg (optional)
- 1 tbsp lemon juice (freshly squeezed)
- 1 tsp vanilla extract (optional)
- 1 cup (90g) old-fashioned rolled oats
- 1/2 cup (65g) all-purpose flour
- 1/2 cup (100g) packed light brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup (115g) unsalted butter, cold and cubed
Instructions:
- Preheat the oven to 350°F (175°C).
- Peel, core, and slice the apples into even pieces. Toss with granulated sugar, cinnamon, nutmeg, lemon juice, and vanilla extract in a large mixing bowl.
- In a separate bowl, combine the rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Add the cold cubed butter and mix with a pastry cutter or fork until the mixture resembles coarse crumbs with some pea-sized chunks.
- Spread the apple mixture evenly in a 9x9 inch baking dish. Sprinkle the crisp topping evenly over the apples.
- Bake for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges.
- Allow the apple crisp to cool for 10-15 minutes before serving so the juices thicken.
