Ingredients:
- 1.5 lbs chicken breast, boneless and skinless
- 1 tbsp extra virgin olive oil
- 0.5 tsp sea salt
- 0.5 tsp black pepper
- 0.5 cup Panko breadcrumbs
- 0.5 cup Parmesan cheese, freshly grated
- 3 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp dried Italian seasoning
- 0.25 cup Greek yogurt
- 2 tbsp unsalted butter, melted
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or place a wire rack over the sheet for maximum airflow.
- Pat the chicken dry with paper towels. Pound breasts to an even 3/4-inch thickness. Season both sides with salt and pepper.
- In a small bowl, mix the Greek yogurt (or mayonnaise), minced garlic, and garlic powder. Brush this mixture generously over all sides of the chicken.
- In a second shallow bowl, combine the Panko, grated Parmesan, Italian seasoning, and melted butter. Toss until crumbs are evenly moistened.
- Press each piece of chicken into the breadcrumb mixture, ensuring a thick, even layer on top. Place onto the prepared baking sheet.
- Bake in the center rack for 22–28 minutes until the internal temperature reaches 165°F (74°C).
- Optional: Broil for the final 2 minutes for a deeper golden brown crust.
- Let the chicken rest for 5 minutes before slicing to allow juices to redistribute.
