Ingredients:

  • 1.5 lbs chicken breast, boneless and skinless
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp sea salt
  • 0.5 tsp black pepper
  • 0.5 cup Panko breadcrumbs
  • 0.5 cup Parmesan cheese, freshly grated
  • 3 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • 0.25 cup Greek yogurt
  • 2 tbsp unsalted butter, melted

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or place a wire rack over the sheet for maximum airflow.
  2. Pat the chicken dry with paper towels. Pound breasts to an even 3/4-inch thickness. Season both sides with salt and pepper.
  3. In a small bowl, mix the Greek yogurt (or mayonnaise), minced garlic, and garlic powder. Brush this mixture generously over all sides of the chicken.
  4. In a second shallow bowl, combine the Panko, grated Parmesan, Italian seasoning, and melted butter. Toss until crumbs are evenly moistened.
  5. Press each piece of chicken into the breadcrumb mixture, ensuring a thick, even layer on top. Place onto the prepared baking sheet.
  6. Bake in the center rack for 22–28 minutes until the internal temperature reaches 165°F (74°C).
  7. Optional: Broil for the final 2 minutes for a deeper golden brown crust.
  8. Let the chicken rest for 5 minutes before slicing to allow juices to redistribute.
