Ingredients:

  • 4 (6 oz) skin-on salmon fillets
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika

Instructions:

  1. Pat the salmon fillets completely dry using paper towels to ensure a crisp sear.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, and paprika.
  3. Brush the marinade mixture generously over the flesh side of the salmon fillets.
  4. Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking.
  5. Place the fillets skin-side down on the grill. Close the lid and sear undisturbed for 6–8 minutes until the color change reaches the top third of the fillet.
  6. Carefully flip the fillets using tongs and grill the flesh side for 2–4 minutes.
  7. Remove the salmon from the heat when the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for well-done.
