Ingredients:
- 2 cups (200g) super-fine almond flour
- 3 tbsp (42g) melted unsalted butter
- 2 tbsp (25g) allulose or granulated monk fruit sweetener
- 1 large (50g) egg
- 1/4 tsp (1.5g) salt
- 15 oz (425g) pure pumpkin puree
- 3/4 cup (150g) allulose or erythritol blend
- 3 large (150g) eggs
- 1/2 cup (120ml) heavy cream
- 1 tsp (5ml) vanilla extract
- 1 tbsp (8g) pumpkin pie spice
- 1/4 tsp (1.5g) salt
Instructions:
- Whisk together almond flour, sweetener, and salt in a medium bowl until no clumps remain.
- Stir in the melted butter and egg until a soft dough forms.
- Press the dough evenly into the bottom and up the sides of a 9-inch pie dish.
- Blind bake at 350°F (175°C) for 8–10 minutes until edges are lightly golden, then remove and cool slightly.
- Beat the pumpkin puree and sweetener in a large bowl until smooth.
- Add eggs one at a time, beating well after each addition to ensure a stable emulsion.
- Whisk in the heavy cream, vanilla extract, pumpkin pie spice, and salt until the mixture is uniform and glossy.
- Pour the filling into the pre-baked crust and smooth the top with a spatula.
- Bake in the center rack at 325°F (160°C) for 35–45 minutes, until the edges are set but the center has a slight wobble.
- Allow the pie to cool completely on a wire rack for at least 2 hours before slicing.
