Ingredients:
- 8 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill, finely minced
- 1 tbsp fresh parsley, finely minced
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 2 large English cucumbers
- 1 lb soft white sandwich bread
- 1 tbsp extra virgin olive oil
- black pepper for garnish
- flaky sea salt for garnish
Instructions:
- Slice the English cucumbers into rounds approximately 1/8 inch thick. Lay the slices in a single layer on paper towels, sprinkle with a pinch of salt, let sit for 5 minutes, and gently pat the tops dry.
- In a medium bowl, combine the softened cream cheese, mayonnaise, lemon juice, minced dill, minced parsley, and garlic powder. Whip with a spatula until the mixture is smooth and airy.
- Cut the white sandwich bread into small circles using a biscuit cutter or into neat squares. Optionally, lightly brush the bread with extra virgin olive oil.
- Spread a generous layer of the cream cheese mixture across each piece of bread.
- Place 1-2 cucumber slices on each piece of bread, overlapping them slightly. Garnish with a crack of black pepper and a pinch of flaky salt.
