Ingredients:
- 1 cup (225g) Unsalted Butter, softened
- 1 cup (200g) Granulated White Sugar
- 1 Large Egg, room temperature
- 1.5 tsp Pure Vanilla Extract
- 2.5 cups (315g) All-Purpose Flour
- 0.25 cup (30g) Cornstarch
- 0.5 tsp Baking Powder
- 0.5 tsp Fine Sea Salt
- 1 tsp Peppermint Extract
- 0.5 tsp Deep Red Gel Food Coloring
Instructions:
- Cream the butter and sugar in a stand mixer with a paddle attachment for about 3 minutes until pale and fluffy.
- Add the egg and vanilla extract to the mixture, scraping down the sides to ensure a complete emulsion.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients until a soft, non-sticky dough forms.
- Divide the dough into two equal portions. Leave one portion plain. Return the second portion to the mixer and incorporate the red gel food coloring and peppermint extract until the color is uniform.
- Roll the white dough between two sheets of parchment paper into a 12x9 inch rectangle. Repeat this process for the red dough.
- Layer the red dough rectangle on top of the white dough. Roll the layered dough tightly into a log, wrap in plastic and chill for 1 hour.
- Slice the log into 1/2 inch rounds. Bake at 350°F for 10 minutes until the edges are set but not browned.
