Ingredients:
- 40–50 Saltine Crackers (approx. 1 standard sleeve)
- 1 cup (2 sticks) Unsalted Butter
- 1 cup packed Light Brown Sugar
- 12 ounces Semi-Sweet Chocolate Chips
- 1/2 teaspoon Flaky Sea Salt (optional)
- 2–3 tablespoons Optional Sprinkles or Chopped Nuts
Instructions:
- Prep the Oven and Tray: Preheat the oven to 400°F (200°C). Line a standard half sheet baking tray with aluminum foil, creating an overhang/sling. Line the foil with parchment paper, arranging the saltine crackers in a single, tight layer across the prepared sheet.
- Cook the Toffee Base: In a heavy-bottomed saucepan, melt the butter and brown sugar together over medium heat, stirring gently until the sugar dissolves. Increase the heat to medium-high and bring the mixture to a rolling boil.
- Boil the Toffee: Once a rolling boil is achieved, stop stirring and boil vigorously for exactly 3 to 5 minutes until the mixture thickens slightly and deepens in color to a rich caramel brown. Remove the pan immediately from the heat.
- Bake the Toffee: Quickly and carefully pour the hot toffee mixture over the crackers, ensuring every cracker is covered. Transfer the tray to the preheated oven and bake for 5 to 7 minutes until the toffee is bubbling aggressively.
- Add the Chocolate Topping: Remove the tray from the oven. Immediately sprinkle the chocolate chips evenly over the hot toffee layer. Let the tray rest for 5 minutes to allow the residual heat to melt the chocolate, then spread the melted chocolate smoothly across the toffee layer using an offset spatula.
- Finish and Chill: While the chocolate is still wet, sprinkle with flaky sea salt and any optional nuts or sprinkles. Allow to cool slightly at room temperature for 15 minutes, then transfer to the refrigerator and chill for at least 1 hour, or until completely hard and set.
- Break and Serve: Lift the entire slab out using the foil/parchment sling. Peel away the parchment paper from the back of the crackers. Break the slab into rough, manageable pieces using your hands. Store in an airtight container.
