Ingredients:

  • 1 (15 oz) can Pure Pumpkin Purée (425 g)
  • ¼ cup packed Light Brown Sugar (50 g)
  • 1 (3.4 oz) box Instant Vanilla Pudding Mix (96 g)
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Ginger
  • ¼ teaspoon Ground Nutmeg
  • Pinch Ground Cloves or Allspice (optional)
  • 1 teaspoon Vanilla Extract
  • 1 (16 oz) tub Frozen Whipped Topping (450 g), thawed

Instructions:

  1. Prepare the Whipped Topping: Ensure the frozen whipped topping is fully thawed in the refrigerator before starting (usually takes 3–4 hours). Do not microwave.
  2. Combine Wet Ingredients: In a large mixing bowl, thoroughly combine the pumpkin purée, brown sugar, and vanilla extract until the sugar is dissolved and the mixture is uniform.
  3. Whisk in Spices and Stabiliser: Add the instant vanilla pudding mix, cinnamon, ginger, nutmeg, and cloves (if using) to the pumpkin mixture.
  4. Mix Vigorously: Using a hand whisk or mixer on medium speed, whisk the mixture for 1–2 minutes until everything is fully incorporated and slightly thickened. The instant pudding powder will immediately begin to work, creating a dense base.
  5. Introduce the Fluff: Gently scoop half of the thawed whipped topping onto the pumpkin base mixture.
  6. Fold (The Gentle Art): Using a large rubber spatula, carefully fold the whipped topping into the pumpkin mixture. Use a gentle, sweeping motion, cutting down the middle and bringing the contents up and over the top. This is crucial for maintaining the airy texture.
  7. Add Remaining Topping: Add the rest of the whipped topping and continue folding until no streaks of white topping or pumpkin remain. Stop as soon as it is uniform—overmixing will deflate the air.
  8. Transfer and Chill: Transfer the pumpkin fluff to your chosen serving dish (a large bowl, trifle dish, or individual ramekins). Smooth the top with a spatula.
  9. Set: Cover the dish loosely with cling film and refrigerate for a minimum of 3 hours, but ideally 4–6 hours, to allow the pudding mix to fully set the dessert.
  10. Garnish and Serve: Before serving, garnish as desired with cinnamon, chopped pecans, or vanilla wafers.
