Ingredients:
- 2 cups frozen pineapple chunks (340g)
- ½ cup unsweetened almond milk (120ml)
- ¼ cup granulated sugar (50g)
- 1 tablespoon fresh lemon juice (15ml)
- Pinch of salt
- Optional: ½ teaspoon pineapple extract
- Optional: 1 cup Vanilla Ice Cream
Instructions:
- Place frozen pineapple, almond milk, sugar, lemon juice, salt, and pineapple extract (if using) into your blender.
- Blend on high speed until completely smooth and creamy. You may need to stop the blender and scrape down the sides occasionally.
- Pour the mixture into a freezer-safe container. Freeze for 2 hours to partially solidify.
- After 2 hours, remove from freezer and re-blend the mixture again.
- Return the mixture to the freezer for another 2-3 hours, or until it reaches a soft-serve consistency.
- Scoop into bowls or swirl into cones. Serve immediately and enjoy your homemade Dole Whip!
