Ingredients:

  • 4 oz (115g) cream cheese, softened to room temperature
  • 1 tbsp (15ml) mayonnaise
  • 1 tsp (2g) dried dill
  • 6 slices (approx. 180g) soft white pullman bread
  • 1 English cucumber (approx. 12 oz / 340g)

Instructions:

  1. Thinly slice the English cucumber into rounds roughly 1/8 inch thick. Lay the slices in a single layer on paper towels and gently press another towel on top to remove excess surface moisture.
  2. In a small bowl, combine the softened cream cheese, mayonnaise, and dill. Use a spatula to whip the mixture until it is velvety and completely smooth.
  3. Spread a generous, even layer of the cream cheese mixture onto one side of each bread slice, extending the spread all the way to the edges.
  4. Arrange the patted-dry cucumber slices in overlapping rows across the bread.
  5. Close the sandwiches and use a serrated knife to trim the crusts off in one clean motion. Slice into triangles or fingers for presentation.
