Ingredients:

  • 1 1/2 cups (190g) All-Purpose Flour
  • 2 tablespoons (25g) Granulated Sugar
  • 2 teaspoons (10g) Baking Powder
  • 1/2 teaspoon (2.5g) Baking Soda
  • 1/4 teaspoon (1.5g) Salt
  • 1 1/2 cups (360ml) Buttermilk
  • 2 Large Eggs (about 100g)
  • 3 tablespoons (45g) Unsalted Butter, melted, plus more for greasing
  • 1 teaspoon (5ml) Vanilla Extract

Instructions:

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Avoid overmixing.
  4. Heat a griddle or large non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and bubbles appear on the surface. Flip when the bubbles start to pop and the edges look set.
  6. Serve the pancakes immediately with your favorite toppings.
