Ingredients:
- 1 cup (125g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon (5g) baking powder
- 1/2 teaspoon (2g) baking soda
- 1/4 teaspoon (1g) salt
- 1 cup (240ml) buttermilk
- 1 large egg
- 2 tablespoons (30g) unsalted butter, melted
- 1/2 cup (90g) semi-sweet chocolate chips
- Additional chocolate chips for topping
- Maple syrup for serving
Instructions:
- In a bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
- In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay. Do not overmix.
- Fold in the chocolate chips carefully.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
- Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface (about 2–3 minutes), then flip and cook until golden brown (about 1-2 minutes more).
- Transfer cooked pancakes to a plate and serve warm with maple syrup and additional chocolate chips if desired.
