Ingredients:

  • 1 cup (125g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon (5g) baking powder
  • 1/2 teaspoon (2g) baking soda
  • 1/4 teaspoon (1g) salt
  • 1 cup (240ml) buttermilk
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted
  • 1/2 cup (90g) semi-sweet chocolate chips
  • Additional chocolate chips for topping
  • Maple syrup for serving

Instructions:

  1. In a bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  2. In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay. Do not overmix.
  4. Fold in the chocolate chips carefully.
  5. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface (about 2–3 minutes), then flip and cook until golden brown (about 1-2 minutes more).
  7. Transfer cooked pancakes to a plate and serve warm with maple syrup and additional chocolate chips if desired.
