  • 1 tablespoon (15 g) baking powder
  • ½ teaspoon (2.5 g) salt
  • 1 cup (240 ml) milk (dairy or plant-based)
  • 2 large eggs
  • 4 tablespoons (60 g) unsalted butter, melted
  • 1 teaspoon (5 ml) vanilla extract

Instructions:

  1. Gather and measure all ingredients.
  2. In a large mixing bowl, whisk together the yellow maize flour, all-purpose flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined (do not overmix; lumps are okay).
  5. Heat a non-stick skillet or griddle over medium heat; lightly grease with butter or oil.
  6. Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges appear set (about 2-3 minutes).
  7. Carefully flip the pancakes and cook until golden brown on the other side (about another 2-3 minutes).
  8. Transfer cooked pancakes to a plate or keep warm in an oven set to low heat.
  9. Stack pancakes, add toppings of choice, and serve warm.
