- 1 cup (120 g) yellow maize flour (corn meal)
- 1 cup (120 g) all-purpose flour
- 2 tablespoons (25 g) granulated sugar
- 1 tablespoon (15 g) baking powder
- ½ teaspoon (2.5 g) salt
- 1 cup (240 ml) milk (dairy or plant-based)
- 2 large eggs
- 4 tablespoons (60 g) unsalted butter, melted
- 1 teaspoon (5 ml) vanilla extract
Instructions:
- Gather and measure all ingredients.
- In a large mixing bowl, whisk together the yellow maize flour, all-purpose flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined (do not overmix; lumps are okay).
- Heat a non-stick skillet or griddle over medium heat; lightly grease with butter or oil.
- Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges appear set (about 2-3 minutes).
- Carefully flip the pancakes and cook until golden brown on the other side (about another 2-3 minutes).
- Transfer cooked pancakes to a plate or keep warm in an oven set to low heat.
- Stack pancakes, add toppings of choice, and serve warm.
