Ingredients:

  • 1 cup (225g) active sourdough starter
  • 1 cup (240ml) warm water
  • 3 1/2 cups (450g) bread flour
  • 2 tbsp (25g) granulated sugar
  • 1 1/2 tsp (9g) fine sea salt
  • 4 tbsp (55g) unsalted butter, softened

Instructions:

  1. Whisk together the active starter and warm water in a bowl until the starter is mostly dissolved.
  2. Stir in the sugar and bread flour until a shaggy dough forms, then add the salt and softened butter.
  3. Knead by hand or with a dough hook for 5–7 minutes until the dough is smooth, elastic, and pulls away from the sides of the bowl.
  4. Cover the bowl with a damp cloth and let it rise in a warm spot until doubled in size (usually 4–6 hours).
  5. Gently punch down the dough and divide it into 12 equal pieces (approx. 60-70g each).
  6. Roll each piece into a tight ball, pulling the dough toward the center to create surface tension.
  7. Place the shaped rolls on a parchment-lined baking sheet and freeze uncovered to flash-freeze before bagging.
