Ingredients:

  • 2 medium carrots, grated (about 1 cup or 130g)
  • 2 medium potatoes, peeled and grated (about 1 cup or 150g)
  • 1 small onion, finely chopped (about 1/2 cup or 75g)
  • 1/2 cup all-purpose flour (60g)
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped (optional)
  • Vegetable oil (enough for shallow frying, about 1 cup or 240ml)

Instructions:

  1. Grate the carrots and potatoes using a box grater or food processor. Place grated vegetables in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the grated carrots, potatoes, and chopped onion. Add flour, egg, salt, pepper, paprika, and parsley (if using). Mix until well combined.
  3. In a non-stick skillet, heat about 1/2 inch of vegetable oil over medium heat until shimmering.
  4. Using your hands or a spoon, shape the mixture into small patties (approximately 2 inches in diameter).
  5. Carefully add fritters to the hot oil, cooking in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes on each side.
  6. Use a slotted spoon to transfer cooked fritters to a plate lined with paper towels to absorb excess oil.
  7. Enjoy your fritters warm, garnished with extra parsley if desired.
