Ingredients:
- 2 medium carrots, grated (about 1 cup or 130g)
- 2 medium potatoes, peeled and grated (about 1 cup or 150g)
- 1 small onion, finely chopped (about 1/2 cup or 75g)
- 1/2 cup all-purpose flour (60g)
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons fresh parsley, chopped (optional)
- Vegetable oil (enough for shallow frying, about 1 cup or 240ml)
Instructions:
- Grate the carrots and potatoes using a box grater or food processor. Place grated vegetables in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the grated carrots, potatoes, and chopped onion. Add flour, egg, salt, pepper, paprika, and parsley (if using). Mix until well combined.
- In a non-stick skillet, heat about 1/2 inch of vegetable oil over medium heat until shimmering.
- Using your hands or a spoon, shape the mixture into small patties (approximately 2 inches in diameter).
- Carefully add fritters to the hot oil, cooking in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes on each side.
- Use a slotted spoon to transfer cooked fritters to a plate lined with paper towels to absorb excess oil.
- Enjoy your fritters warm, garnished with extra parsley if desired.
