Ingredients:
- 1 (14-ounce) can pineapple rings, in juice, drained (400g)
- 2 tablespoons brown sugar (30g)
- 1/2 teaspoon ground cinnamon (2g)
- 1 tablespoon unsweetened shredded coconut flakes (5g)
- Optional: a dollop of vanilla ice cream for serving
Instructions:
- Thoroughly drain the pineapple rings. Pat them dry with a paper towel.
- In a small bowl, mix together the brown sugar and cinnamon.
- Sprinkle the brown sugar mixture evenly over both sides of the pineapple rings.
- Arrange the pineapple rings in a single layer in the air fryer basket. Cook until golden brown and slightly caramelized.
- If not pre-toasted, add coconut to air fryer for last minute of cook. Watch closely to avoid burning.
- Sprinkle the toasted coconut flakes over the pineapple rings. Serve immediately.
