Ingredients:

  • 4 ears of fresh sweet corn (about 1 kg)
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 g) salt
  • ½ teaspoon (2 g) black pepper
  • 1 teaspoon (2 g) smoked paprika (optional)
  • Fresh lime wedges (for garnish, optional)
  • Chopped fresh cilantro or parsley (for garnish, optional)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the corn by removing husk and silk.
  3. Cut the corn into halves, thirds, or leave whole depending on preference.
  4. Toss the corn in a large bowl with olive oil, salt, pepper, and smoked paprika.
  5. Arrange the coated corn on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  7. Remove from the oven and garnish with lime wedges and herbs if desired.
  8. Serve warm.
