Ingredients:
- 4 ears of fresh sweet corn (about 1 kg)
- 2 tablespoons (30 ml) olive oil
- 1 teaspoon (5 g) salt
- ½ teaspoon (2 g) black pepper
- 1 teaspoon (2 g) smoked paprika (optional)
- Fresh lime wedges (for garnish, optional)
- Chopped fresh cilantro or parsley (for garnish, optional)
Instructions:
- Preheat the oven to 425°F (220°C).
- Prepare the corn by removing husk and silk.
- Cut the corn into halves, thirds, or leave whole depending on preference.
- Toss the corn in a large bowl with olive oil, salt, pepper, and smoked paprika.
- Arrange the coated corn on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through.
- Remove from the oven and garnish with lime wedges and herbs if desired.
- Serve warm.
