Ingredients:
- 2 lbs (900g) pickling cucumbers, finely diced
- 1 large Granny Smith apple, peeled, cored, and finely diced
- 1 large red bell pepper, finely diced
- 1 large yellow onion, finely diced
- 1/4 cup (50g) kosher salt
- 2 cups (480ml) white vinegar (5% acidity)
- 1 ½ cups (300g) granulated sugar
- 1 tbsp yellow mustard seeds
- 1 tsp celery seeds
- 1/2 tsp ground turmeric
- 1/4 tsp ground cloves
- Pinch of red pepper flakes (optional)
Instructions:
- Dice cucumbers, apple, bell pepper, and onion.
- Combine diced vegetables and salt in a large bowl. Toss well. Let stand for 30 minutes to draw out excess moisture. Drain in a colander and rinse thoroughly under cold water. Press out any remaining liquid.
- In a large saucepan, combine vinegar, sugar, mustard seeds, celery seeds, turmeric, cloves, and red pepper flakes (if using).
- Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves. Reduce heat to medium-low and add the drained vegetables and apple. Simmer, uncovered, for about 30 minutes, or until the vegetables are tender and the relish has thickened slightly. This is your perfect sweet relish!
- Remove from heat and let cool completely. Store in an airtight container in the refrigerator for up to 2 weeks. For longer storage, process in sterilized canning jars according to standard canning procedures.
