Ingredients:

  • 1 large head of cauliflower (about 2 lbs / 900 g)
  • 3 tbsp olive oil (45 ml)
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder (or 2 cloves fresh garlic, minced)
  • 1 tbsp fresh lemon juice (15 ml)
  • 1 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
  • Salt, to taste (about 1 tsp)
  • Black pepper, to taste (about ½ tsp)
  • Freshly chopped parsley or cilantro (optional garnish)
  • Lemon wedges (optional garnish)

Instructions:

  1. Remove the outer leaves and trim the stem base while keeping the core intact to hold the steak together.
  2. Slice the cauliflower widthwise into 3/4-inch (2 cm) thick steaks, yielding about 3-4 good steaks from one head.
  3. In a bowl, whisk together olive oil, smoked paprika, cumin, garlic powder, lemon juice, parsley, salt, and pepper until well combined.
  4. Brush or spoon the marinade generously over both sides of each cauliflower steak and let them rest for 20-30 minutes.
  5. Heat the grill or grill pan over medium-high heat and lightly oil the grill grates to prevent sticking.
  6. Place the marinated steaks on the grill and cook for 6-7 minutes per side until grill marks form and the cauliflower is tender.
  7. Use tongs to flip gently to avoid breaking and grill evenly on both sides.
  8. Transfer to a plate, garnish with fresh herbs and lemon wedges, and serve warm.
