Ingredients:
- 1 large head of cauliflower (about 2 lbs / 900 g)
- 3 tbsp olive oil (45 ml)
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic powder (or 2 cloves fresh garlic, minced)
- 1 tbsp fresh lemon juice (15 ml)
- 1 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
- Salt, to taste (about 1 tsp)
- Black pepper, to taste (about ½ tsp)
- Freshly chopped parsley or cilantro (optional garnish)
- Lemon wedges (optional garnish)
Instructions:
- Remove the outer leaves and trim the stem base while keeping the core intact to hold the steak together.
- Slice the cauliflower widthwise into 3/4-inch (2 cm) thick steaks, yielding about 3-4 good steaks from one head.
- In a bowl, whisk together olive oil, smoked paprika, cumin, garlic powder, lemon juice, parsley, salt, and pepper until well combined.
- Brush or spoon the marinade generously over both sides of each cauliflower steak and let them rest for 20-30 minutes.
- Heat the grill or grill pan over medium-high heat and lightly oil the grill grates to prevent sticking.
- Place the marinated steaks on the grill and cook for 6-7 minutes per side until grill marks form and the cauliflower is tender.
- Use tongs to flip gently to avoid breaking and grill evenly on both sides.
- Transfer to a plate, garnish with fresh herbs and lemon wedges, and serve warm.
