Ingredients:

  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 pounds colossal shrimp, peeled and deveined (16/20 count)
  • Lemon wedges, for serving

Instructions:

  1. In a mixing bowl, combine melted butter, minced garlic, lemon juice, lemon zest, parsley, smoked paprika, red pepper flakes (if using), salt, and pepper.
  2. Add colossal shrimp to the marinade, ensuring they are fully coated. Cover and refrigerate for 30 minutes.
  3. Heat the grill to medium-high heat (about 400°F/200°C).
  4. Thread shrimp onto skewers, leaving some space between each for even cooking. Alternatively, place them directly on the grill.
  5. Place shrimp on the grill. Cook for about 2-3 minutes on each side or until the shrimp turn opaque and have nice grill marks.
  6. Remove shrimp from the grill and serve immediately with lemon wedges.
