Ingredients:
- 2 pounds sirloin steak, trimmed
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 cup fresh parsley, chopped
- 1/4 cup fresh rosemary, chopped
- 1/4 cup fresh thyme, chopped
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes, optional
- 1/4 cup grated Parmesan cheese
- Zest of 1 lemon
- 2 tablespoons Dijon mustard
Instructions:
- In a mixing bowl, combine parsley, rosemary, thyme, garlic, red pepper flakes, Parmesan, and lemon zest.
- Stir in Dijon mustard and mix until well combined.
- Rub the steak all over with olive oil, salt, and black pepper.
- Spread the herb mixture evenly over one side of the steak. Press it gently to adhere.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat (about 400°F or 200°C).
- Remove the steak from the refrigerator and let it come to room temperature for about 10-15 minutes.
- Place the steak herb-side down on the grill. Grill for 5-7 minutes.
- Flip the steak and grill for an additional 5-8 minutes, or until it reaches your desired doneness.
- Remove the steak from the grill and let it rest for 5-10 minutes before slicing.
- Slice against the grain and serve warm.
