Ingredients:

  • 2 pounds sirloin steak, trimmed
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes, optional
  • 1/4 cup grated Parmesan cheese
  • Zest of 1 lemon
  • 2 tablespoons Dijon mustard

Instructions:

  1. In a mixing bowl, combine parsley, rosemary, thyme, garlic, red pepper flakes, Parmesan, and lemon zest.
  2. Stir in Dijon mustard and mix until well combined.
  3. Rub the steak all over with olive oil, salt, and black pepper.
  4. Spread the herb mixture evenly over one side of the steak. Press it gently to adhere.
  5. Cover and marinate in the refrigerator for at least 30 minutes.
  6. Preheat your grill to medium-high heat (about 400°F or 200°C).
  7. Remove the steak from the refrigerator and let it come to room temperature for about 10-15 minutes.
  8. Place the steak herb-side down on the grill. Grill for 5-7 minutes.
  9. Flip the steak and grill for an additional 5-8 minutes, or until it reaches your desired doneness.
  10. Remove the steak from the grill and let it rest for 5-10 minutes before slicing.
  11. Slice against the grain and serve warm.
