Ingredients:
- 1 cup fruit juice (e.g., orange, grape, or mixed berry)
- 2 tablespoons granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon gelatin powder
- 2 cups fruit-flavored gelatin
- 1 cup water
- 1 cup granulated sugar
- 1 tablespoon lemon juice
Instructions:
- In a small saucepan over low heat, combine fruit juice, sugar, cornstarch, and gelatin. Whisk until smooth and simmer until thickened, about 3-5 minutes. Remove from heat and let cool.
- Pour the mixture into a small dish and refrigerate for at least 20 minutes until set.
- In a medium saucepan, combine fruit-flavored gelatin, water, sugar, and lemon juice. Stir over low heat until completely dissolved, then remove from heat.
- Lightly grease silicone molds. Pour a thin layer of the gelatin mixture into the molds, filling only partway. Place a small spoonful of the cooled gel filling in the center, then cover with more gelatin mixture.
- Refrigerate the molds for at least 30 minutes or until fully set.
- Carefully invert the molds to release the Gushers. Store them in an airtight container in the refrigerator.
