Ingredients:

  • 1 cup fruit juice (e.g., orange, grape, or mixed berry)
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon gelatin powder
  • 2 cups fruit-flavored gelatin
  • 1 cup water
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice

Instructions:

  1. In a small saucepan over low heat, combine fruit juice, sugar, cornstarch, and gelatin. Whisk until smooth and simmer until thickened, about 3-5 minutes. Remove from heat and let cool.
  2. Pour the mixture into a small dish and refrigerate for at least 20 minutes until set.
  3. In a medium saucepan, combine fruit-flavored gelatin, water, sugar, and lemon juice. Stir over low heat until completely dissolved, then remove from heat.
  4. Lightly grease silicone molds. Pour a thin layer of the gelatin mixture into the molds, filling only partway. Place a small spoonful of the cooled gel filling in the center, then cover with more gelatin mixture.
  5. Refrigerate the molds for at least 30 minutes or until fully set.
  6. Carefully invert the molds to release the Gushers. Store them in an airtight container in the refrigerator.
