Ingredients:
- 1 cup water
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 1/4 tsp fine sea salt
- 1 cup white whole wheat flour
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 3 tbsp coconut sugar
- 1 tbsp ground Ceylon cinnamon
- 1 tsp avocado oil spray
Instructions:
- Combine 1 cup water, 2 tbsp coconut oil, 1 tbsp maple syrup, and 1/4 tsp salt in a medium saucepan. Heat until it reaches a rolling boil.
- Remove the pan from heat and dump in the 1 cup white whole wheat flour all at once. Stir vigorously with a wooden spoon until a thick dough ball forms and pulls away from the sides.
- Return the pan to low heat for 60 seconds, stirring constantly. You’re looking for a thin film to form on the bottom of the pan.
- Move the dough to a bowl and let it sit for 5 minutes. It should be warm to the touch but not steaming.
- Whisk the 1 large egg with 1 tsp vanilla, then add it to the dough. Use a sturdy spatula or hand mixer to beat it until the dough is glossy and smooth.
- Preheat your air fryer to 375°F. Lightly spray the basket with avocado oil.
- Transfer the dough to a piping bag with a star tip (or a zip top bag with the corner cut off). Pipe 1 inch pieces directly into the basket, snip with scissors.
- Cook for 10 minutes until the edges are golden and the centers feel firm. Don't overcrowd the basket; leave space for air to circulate.
- While they cook, mix 3 tbsp coconut sugar and 1 tbsp cinnamon in a shallow bowl.
- Immediately after frying, lightly spray the hot bites with a tiny bit of oil and toss in the cinnamon sugar until fully encrusted.
