Ingredients:

  • 12 ounces spaghetti
  • 2 cups cooked chicken, shredded or diced
  • 1 can diced tomatoes, drained
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Boil a large pot of salted water. Add spaghetti and cook until al dente. Drain and set aside.
  3. In a skillet, heat a splash of oil over medium heat. Add chopped onion and garlic; sauté until softened and fragrant.
  4. In a large mixing bowl, combine the cooked chicken, drained tomatoes, chicken broth, sour cream, oregano, basil, and season with salt and pepper.
  5. Fold the cooked spaghetti into the sauce mixture until evenly coated.
  6. Pour the spaghetti mixture into the greased baking dish. Sprinkle with shredded cheddar and mozzarella cheese on top.
  7. Place in the preheated oven and bake for 25-30 minutes until bubbly and golden on top.
  8. Remove from the oven; let cool for a few minutes before garnishing and serving.
