Ingredients:
- 12 ounces spaghetti
- 2 cups cooked chicken, shredded or diced
- 1 can diced tomatoes, drained
- 1 cup chicken broth
- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus extra for topping)
- 1 cup shredded mozzarella cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- Boil a large pot of salted water. Add spaghetti and cook until al dente. Drain and set aside.
- In a skillet, heat a splash of oil over medium heat. Add chopped onion and garlic; sauté until softened and fragrant.
- In a large mixing bowl, combine the cooked chicken, drained tomatoes, chicken broth, sour cream, oregano, basil, and season with salt and pepper.
- Fold the cooked spaghetti into the sauce mixture until evenly coated.
- Pour the spaghetti mixture into the greased baking dish. Sprinkle with shredded cheddar and mozzarella cheese on top.
- Place in the preheated oven and bake for 25-30 minutes until bubbly and golden on top.
- Remove from the oven; let cool for a few minutes before garnishing and serving.
